Our Story
44 Hill Street Opened in 2018 by renowned restaurateur Guillaume Rabillat, the restaurant marked an exciting new chapter following the closure of his much-loved French restaurant, La Bastille on the Lisburn Road.
After years of success in South Belfast, Guillaume saw an opportunity in the heart of the Cathedral Quarter. Drawn to the energy, creativity and character of Hill Street, he envisioned a venue that combined quality dining with a relaxed, social atmosphere. The pieces quickly fell into place, and 44 Hill Street became a destination where locals and visitors alike could gather to enjoy great food, great drinks and great company.
Today, another chapter is being written.

With a fresh vision for the future, Guillaume's son, Dean Rabillat, has stepped into the kitchen to lead the next evolution of 44 Hill Street. Bringing a modern approach, new creativity and a passion for exceptional ingredients, Dean is building on the foundations that made 44 a success while introducing a bold new direction of his own.
Together, father and son share a commitment to quality, hospitality and creating memorable experiences for every guest who walks through the door.
